Garnish and Aroma

A garnish is not random decoration. It shapes the first aroma at the nose, changes scent through the drink and completes the serving ritual.

    Citrus peel

    Cut the coloured zest with as little bitter white pith as possible. Express oils over the surface and, where appropriate, lightly trace the rim.

    Fresh herbs

    Wake mint with one gentle clap. Crushing releases chlorophyll and bitterness; place lively leaves close to the nose.

  3. 03

    Edibility

    Anything entering the glass should be clean, safe and relevant. Secure inedible decoration so it cannot fall into the drink, or leave it out.
