Ice and Dilution

Ice does more than chill: as it melts, it adds measured water. Size, temperature and surface area shape the final balance.

    Large, solid ice

    Fresh, dry, large ice melts more slowly and offers control during shaking or stirring. Wet, tempered ice carries excess water from the start.

    The right fill

    Too little ice often dilutes faster, not slower. Use enough for the pieces to keep one another cold in the shaker or mixing glass.

    Service ice

    Do not carry tired mixing ice into the glass. Fresh service ice extends the life of highballs and rocks drinks.
