Rum Collins recipe: balancing rum, lemon and soda

A Rum Collins combines white rum, fresh lemon, sugar syrup and soda in a tall, refreshing format. Replacing the gin in a Collins structure with rum creates a softer, lightly tropical impression.

The proportion that creates balance

Rum provides body, lemon acidity, syrup balance and soda length. Because lemon acidity changes through the year, make small syrup adjustments rather than increasing it all at once.

Why should soda go in last?

Chill the rum, lemon and syrup with ice, then transfer to a Collins glass with fresh ice. Add soda slowly at the end to preserve carbonation; one brief stir is enough.

Which rum works best?

White rum keeps citrus in front. Lightly aged rum adds vanilla and spice, while a very rich or sweet rum can weigh down the clean Collins structure.
