Paloma recipe: balancing tequila and grapefruit

The Paloma brings together tequila and grapefruit’s bitter, tart and refreshing sides. Two common approaches are a quick grapefruit-soda serve or a more adjustable build using fresh grapefruit, soda and measured sweetener.

Grapefruit soda or fresh fruit?

The IBA recipe uses pink grapefruit soda. With fresh grapefruit, acidity and sugar vary by fruit, so agave syrup should remain optional and measured. Both approaches keep the Paloma’s identity when served properly chilled.

What salt does

Salt is more than decoration: it softens grapefruit bitterness and highlights tequila’s vegetal side. Salting only half the rim lets the drinker choose how much salt reaches each sip.

A serve that keeps its fizz

Fill a highball glass with plenty of ice, add the carbonated ingredient last and stir only briefly. Prolonged stirring flattens the soda and melts more ice than necessary.
