Choosing a Bellini glass: flute, coupe and serving temperature

A chilled flute is the first choice for a Bellini. Its tall, narrow form keeps Prosecco lively for longer, although a small coupe can work when you want the peach aroma to open more quickly.

Why does the flute lead?

The International Bartenders Association serves the Bellini in a chilled flute. The narrow opening limits the wine’s exposed surface and slows the loss of bubbles. Pre-chilling the glass keeps the drink cold without adding ice.

When can a coupe work?

A coupe’s wider bowl releases peach aroma quickly but does not preserve carbonation as long as a flute. It is an elegant option for immediate service; choose the flute when the drink may sit for a while.

For a cleaner serve

Add the peach component first, pour very cold Prosecco slowly and stir only once, gently. Aggressive stirring collapses bubbles, while a warm purée or liqueur raises the drink’s temperature too quickly.
