Balance of Taste

Balance does not mean equal flavours; it means no element overwhelms the others without purpose. Make small corrections in the measure, not by guessing in the glass.

    Sweet and sour

    Acid provides lift while sugar adds body and roundness. Citrus changes through the season, so check balance with a small straw or spoon taste before serving.

    Bitter and aromatic

    Bitter ingredients lengthen the finish but can mask aroma in excess. Keep drops and dashes repeatable by holding the bottle at a consistent angle.

    The role of salt

    A tiny amount of salt can clarify fruit and citrus without adding sweetness. If using saline, record the exact number of drops.
